Our Panettone Gianduja has a double leavening than 48; hours, it is only done with live yeast mother. There is the classic panettone tradition but the cake for the most demanding, who love to experiment. It's enriched with Gianduja Chocolate.

The structure is soft, the taste is elegant yet decided, is not extremely sweet as the chocolate is dark chocolate and cocoa powder. It is a very rich but highly digestible panettone through long rising and use of raw materials of excellent workmanship. It has no preservatives, semi-finished products, flavoings, vegetable fat. It is 100% Artisan and then made entirely by hand, with passion, since 1882. It is ranked among the best homemade panettone of Italian chocolate for Gambero Rosso.

PRESERVATION

Store in a cool, dry place at a maximum of 20-22°C (68-72°F).

Once opened, store the product in its own tightly closed bag.

  • Do not expose to the sun.
  • Avoid sudden changes in temperature.
  • Don't refrigerate it. About 90 days of shelf-life.
  • Once opened, the product keeps a week.

Naturally leavened baked product with gianduja chocolate, without candied citrus peels and raisins - Ingredients: wheat flour, gianduja chocolate (21%) (sugar, hazelnut paste (20% equal to 4.2% of the finished product), cocoa butter, whole milk powder, cocoa mass, skimmed milk powder, emulsifier: soy lecithin; natural vanilla extract), butter, fresh pasteurized egg yolk, sugar, natural sourdough yeast (wheat flour, water), water, hazelnut paste, milk, salt, cream, cornstarch, Bourbon vanilla, lemon peel. May contain nuts (almonds, pistachios), sesame and mustard. Treated with ethyl alcohol.

RAW MATERIALS

We are passionate of raw materials and their related processing techniques. We’ve been fermentation masters since 1882. Olivieri’s leavened cakes have the same organoleptic characteristics (extremely soft texture, refined but strong flavour, high digestibility), which ensure their quality attributes. The aforementioned softness and digestibility are due to the knowing management of all the processing steps. The soft texture is mainly due to the exclusive use of mother yeast, which is daily refreshed and hand worked by our pastry cooks. We only use first-rate raw materials: 5 crowns sultanas, candied oranges (we mince and put them by hand into the dough, in order to lend it a unique and natural citrusy aroma), Bourbon vanilla beans, wheat flours, raw cane sugar, centrifuged butter and honey. Our Panettone cake contains up to 4 times more eggs than other available Panettone cakes. This is the reason why its flavour, texture and colour are beyond compare.

PRODUCTION


We’ve been working by hand for over 140 years, following every process with patience and working the dough with passion, in order to create the real panettone. Each panettone is worked by hand, from the refresh of the mother yeast to the round-shaping and cross-cutting of the dough, in order to ensure the highest quality. It takes four days (more than 72 hours of natural fermentation) of processing to realize “Panettone Olivieri 1882”.

How long do leavened products last?
